Pork Shoulder Picnic Roast

The picnic shoulder roast is from an area of the pig that gets a lot of exercise. As such, quick cooking methods are out, but a long cook at a low temperature benefits this cut, turning it into rich and succulent pulled pork.
Our pork is from red wattle hogs. They live on our organic pasture in moveable pens and eat only organic feed. It's a good life for a pig.
