This is a very special cheese - the inaugural batch of Alpine style cheese from Evensong Farm! Produced in micro batches from a single herd of 60 grass fed Jersey cows. Jerseys are well regarded for the high butterfat content of their milk. This results in a lovely, golden colored cheese. Aged 6 months. The texture is firm and slightly crumbly with a lot of crystallization. It has a pronounced buttery flavor with a nutty finish. Perfect on a cheese board or sandwich.
