After butchering a steer, the roasts and steaks have been cut to size, the meat trim has been ground into ground beef, there are always plenty of beef fat trimmings left over. These are often under utilized and under appreciated, but are in fact, very useful for carnivores needing to increase fat without increasing protein. The trimmings can be crisped in your cast iron and salted or rendered for a beefier tallow that is great for savory cooking.
